Mozzarella & Strawberry Bruschetta
Ingredients
1 French baguette
3/4 cup of chopped strawberries
1/2 cup of quartered cherry tomatoes
1/2 cup of chopped basil
1 large mozzarella ball
2 tablespoons of olive oil
1 tablespoon of balsamic vinegar
1 tablespoon of honey
sea salt
Directions
Preheat the oven to 400 degrees.
Slice your baguette into thin pieces and place them on a cookie sheet.
Drizzle olive oil and sea salt over your baguette pieces and bake for 10 minutes.
In a separate bowl combine your olive oil, honey, and balsamic vinegar together and whisk until smooth.
Add your tomatoes, strawberries, and basil to your bowl and mix.
Let your bruschetta mixture sit for 10 minutes.
Slice your mozzarella ball into small pieces and place on top of your baguette crostini.
Top with your strawberry mixture and enjoy!
