Roasted Squash & Ricotta Pizza
Ingredients
16 oz of pizza dough
1 cup of butternut squash chopped
1 medium yellow onion sliced
3/4 cup of pizza sauce
1 1/4 cup of shredded mozzarella
1/3 cup of ricotta
olive oil
fresh basil
oregano
hot honey
Directions
Preheat the oven to 400F
Line your baking sheet with parchment paper and add the squash.
Drizzle with olive oil and season with salt. Bake for 40 minutes.
While your squash is baking, grease your cast iron with olive oil.
Add your pizza dough into the pan and let sit out until room temperature.
In a skillet combine your onions, olive oil and salt. Cook until the onions are caramelized and brown.
Add your pizza sauce over the dough and top with mozzarella cheese.
Add your squash, onions and dollops of ricotta to the pizza.
Increase the oven to 525 F and transfer the pizza into the oven for 12-15 minutes. Bake until the pizza is a golden brown.
Remove from the oven and top with hot honey and fresh basil.
