Cheesesteak Burritos
These burritos are perfect for meal prepping! I made about 6 of them and had them for lunch throughout the week.
Ingredients
2 bell peppers chopped
1 onion chopped
1 jalapeño chopped (optional)
1 tbsp of minced garlic
2 tbsp of olive oil
25 oz of shredded steak
1 tbsp of Worcestershire sauce
1 cup of cottage cheese
1/2 cup of mozzarella
1/4 cup of parmesan
Chili powder
Oregano
Salt
Pepper
6 medium tortillas
Directions
Preheat the oven to 400 degrees.
Add your chopped bell peppers, onion, jalapeño, and olive oil to a baking sheet. Bake for 30 minutes.
While your peppers are baking add your shredded steak to a frying pan over medium heat.
Season with salt and pepper and add in your minced garlic and Worcestershire sauce. Cook until ground.
Add your cottage cheese to a blender and blend until smooth.
In a mixing bowl combine your cook steak, peppers and onions, cottage cheese, mozzarella, parmesan, oregano, chili powder, salt and pepper.
Add your cheesesteak mixture to a tortilla (about 2 spoonfuls per tortilla) and fold into a burrito.
Bake for an additional 10 minutes and enjoy!
