Cheesesteak Burritos

Cheesesteak Burritos

These burritos are perfect for meal prepping! I made about 6 of them and had them for lunch throughout the week.

Ingredients

  • 2 bell peppers chopped

  • 1 onion chopped

  • 1 jalapeño chopped (optional)

  • 1 tbsp of minced garlic

  • 2 tbsp of olive oil

  • 25 oz of shredded steak

  • 1 tbsp of Worcestershire sauce

  • 1 cup of cottage cheese

  • 1/2 cup of mozzarella

  • 1/4 cup of parmesan

  • Chili powder

  • Oregano

  • Salt

  • Pepper

  • 6 medium tortillas

Directions

  1. Preheat the oven to 400 degrees.

  2. Add your chopped bell peppers, onion, jalapeño, and olive oil to a baking sheet. Bake for 30 minutes.

  3. While your peppers are baking add your shredded steak to a frying pan over medium heat.

  4. Season with salt and pepper and add in your minced garlic and Worcestershire sauce. Cook until ground.

  5. Add your cottage cheese to a blender and blend until smooth.

  6. In a mixing bowl combine your cook steak, peppers and onions, cottage cheese, mozzarella, parmesan, oregano, chili powder, salt and pepper.

  7. Add your cheesesteak mixture to a tortilla (about 2 spoonfuls per tortilla) and fold into a burrito.

  8. Bake for an additional 10 minutes and enjoy!
