Chickpea and Mozzarella Salad
Ingredients:
1 can of strained chickpeas
juice of half a lemon
parsley flakes or fresh parsley
salt
pepper
mozzarella
diced red onion
Directions:
Combine chickpeas, red onion and lemon juice in a bowl. Tear apart your mozzarella into pieces and add to the chickpeas. Season with salt, pepper and parsley. Mix together and add some lemon zest and pepper to garnish.
