Crock Pot Beef Bourguignon
What you’ll need:
3 lbs of chuck roast
6 slices bacon
1 pound of mushrooms cut in half
4 carrots peeled and cut into 1/2 inch pieces
1 cup of white pearl onions
6 cups beef broth
1 cup of red wine
4 garlic cloves minced
3 tablespoons of tomato paste
5 stalks of fresh thyme
4 bay leaves
2 tablespoons of butter
2 tablespoons of flour
Salt
Pepper
Steak seasoning
How to make it:
Chop your bacon into small pieces and cook until the crispy
Cut your chuck roast into 3 smaller pieces and season each side with salt, pepper and steak season.
Heat up a cast iron skillet on high heat and then place each piece of chuck roast in the skillet for 4-6 minutes on each side.
Remove the beef from the pan and place into your crockpot.
Add your mushrooms into the cast iron pan and reduce the heat to medium. Cook the mushrooms for 6 minutes.
In the crockpot add the carrots, onions, garlic, tomato paste, bacon, mushrooms, thyme, bay leaves, butter, flour, red whine, beef broth, salt and pepper.
Cook for 4 hours on high.
Remove the beef from the crock pot and place back into the crock pot.
Cook for an additional hour on low.
Enjoy on its own or with a side of mashed potatoes!
