Poblano Mac & Cheese

Poblano Mac & Cheese

What you’ll need:

  • 2 poblano peppers

  • 1 white onion chopped

  • 6 cloves of garlic

  • A handful of cilantro

  • 1 lime

  • 3/4 cup of heavy cream

  • 1 box of pasta

  • Salt

  • Pepper

  • Garlic powder

  • Chile powder

  • 1 cup of mozzarella

  • 1 cup of parmesan

How to make it:

  1. Char your poblanos, onion and garlic in a cast iron pan or directly on the stove top

  2. Add your peppers, onion and garlic to a blender with the juice of 1 lime, cilantro, and heavy cream. Blend until smooth

  3. Bring a pot of water to a boil and cook your pasta according to the box

  4. Transfer your sauce into a pan over medium heat.

  5. Fold in your mozzarella and parmesan and stir until the cheese has melted

  6. Add your pasta into the sauce and mix until all the pasta has been coated in sauce

  7. If your sauce is too thick add some pasta water

  8. Serve immediately and top with additional mozzarella
