Pumpkin Pie Chia Pudding
When I was thinking of recipes to create for fall my mind instantly went to pies, cookies and other sweet treats. As much as I love all of those…maybe a little too much I thought about how that’s not something I actually eat on a daily basis. My goal with all my recipes is something you can make over and over again so I decided to go with something a little healthier like chia pudding!
Ingredients
3/4 cup pumpkin puree
3/4 cup of milk or milk alternative
`1 to 2 tablespoon of honey
1 teaspoon of pumpkin pie spice
1/4 cup of chia seeds
a pinch of salt
Desired toppings like fresh fruit, pumpkin seeds or granola
Directions
Combine all ingredients (except toppings) until there is a smooth consistency. I used a blender for this but you can also use a whisk.
Pour in your desired containers and chill for at least 4 hours.
Top with your desired toppings. I used bananas and cinnamon!
