Roasted Potatoes & Feta
Ingredients
Whipped Feta:
8 oz of feta
1/2 cup of olive oil
1/4 cup of sour cream
2 tbsp of honey
2 tbsp of oregano
lemon zest
Roasted Potatoes:
Potatoes
Salt
Pepper
1/4 cup of olive oil
Paprika
Directions
Preheat your oven to 400 degrees and bring a medium pot of water to a boil.
Peel your potatoes and cut them into wedges.
Throw your potatoes into the boiling water for about 7 minutes.
Transfer your potatoes to a cookie sheet and drizzle olive oil over them. Season with salt, pepper and paprika.
Bake your potatoes for 30 minutes.
While your potatoes are baking, start your whipped feta.
Combine all of your ingredients into a food processor and blend until smooth.
Transfer your whipped feta into a bowl.
When your potatoes are done place them in the whipped feta and season with oregano.
