Maple Butter Roasted Chicken

Ingredients

  • 1 whole chicken

  • 1/3 cup maple syrup

  • 4 tbsp melted butter

  • 2 tsp of brown sugar

  • 2 tsp of soy sauce

  • 3 limes

  • 2 heads of garlic

  • 1 tsp of garlic powder

  • 1 tsp of Italian herb seasoning

  • salt

  • pepper

  • olive oil

Directions

  1. Preheat your oven to 470F.

  2. Slice 3 limes in half and stuff your chicken with 4 halves of lime and half a head of garlic.

  3. Brush your chicken with olive oil and then season with garlic powder, Italian herb seasoning, salt, pepper, and lime juice.

  4. If any of the seasonings falls off you can add it to melted butter and brush it on top of your chicken.

  5. In a large pan combine your mini potatoes and broccoli with olive oil, 6 garlic cloves, salt, and pepper.

  6. Place your chicken on top and bake for 25 minutes.

  7. Remove your pan and cover with aluminum foil. Then bake for an additional 25 minutes.

  8. While your chicken is cooking you can make your maple butter sauce. Combine your maple syrup, 3 tbsp of melted butter, brown sugar, soy sauce, and the juice of 1/2 a lime.

  9. After 30 minutes, remove your chicken and transfer it to a baking sheet.

  10. Brush the chicken with the maple butter sauce and cook for an additional 10 minutes. Make sure chicken is covered with aluminum foil.

  11. If you have leftover maple butter sauce you can cook it down until it becomes a glaze for your chicken.

  12. Remove your chicken from the oven, let it cool and enjoy!
