Drunken Chicken Zoodles
Ingredients
For the zoodles:
2 chicken breast cubed
1 onion chopped
2 cloves of garlic minced
1 cup of stir fry veggies (carrots, broccoli, snap peas, I just buy a premade mix)
1 bell pepper chopped
2 zucchini’s cut into zoodle or 16 ozs
2 eggs
3 tablespoons of coconut milk
Salt
Pepper
Chili powder
Crushed red pepper
Sesame seeds
1/2 lime cut into wedges
For the sauce:
2 tbsp of fish sauce
2 tbsp of chili garlic sauce
2 tbsp of coconut aminos
1 tbsp of ground ginger
1/2 lime juice
Salt
Pepper
Directions:
Preheat your oven to 350
Add your noodles into an oil casserole dish and set aside.
Add the chicken, onions, bell peppers and olive oil to a pan over medium heat. Saute for 5 minutes
Then add your stir fry veggies and cook for 15 minutes.
Season with salt, pepper and chili powder
While your veggies are cooking combine all of your sauce ingredients together and stir until smooth.
Add your chicken and veggies into the casserole dish on top of the zoodles.
Then whisk your eggs and add them to the casserole dish along with the oat milk
Add your sauce and combine until evenly dispersed.
Bake for 25 minutes.
Remove from the oven and garnish with sesame seeds, crushed red pepper and a lime wedge.
