Baked Italian Chicken

Baked Italian Chicken

Serves 4

Ingredients

  • 4 chicken breast

  • 1/2 cup of olive oil

  • 2 tbsp of balsamic vinegar

  • 6 crushed garlic gloves

  • 1 red onion quartered

  • 1.5 cups of asparagus chopped into 1 inch pieces

  • 1 cup of cherry tomatoes

  • 2 tbsp of oregano

  • 1 tsp of red chili flakes

  • 2 tbsp to italian seasoning

  • salt

  • pepper

  • 1 box of pearled couscous

  • feta

Directions

  1. Preheat the oven to 350 degrees

  2. In a small bowl combine minced garlic, 1/4 cup of olive oil, balsamic vinegar, salt and pepper. Set aside

  3. Place the chicken breast and vegetables into a large roasting dish. Drizzle the remaining 1/4 cup of olive oil over the chicken and vegetables. Season with oregano, Italian seasoning, red chili flakes salt and pepper.

  4. Coat each chicken breast with the olive oil balsamic vinegar mixture.

  5. Place in the oven and bake for 40 minutes.

  6. While your chicken is baking prepare your couscous according to the instructions on its box.

  7. Remove your chicken and plate on top of the couscous.

  8. Sprinkle with feta and enjoy
