Chicken Gnocchi Soup
Ingredients
Chicken
2 large chicken breast
1 tbsp of olive oil
salt
pepper
paprika
garlic powder
Soup
2 tbsp of butter
3 carrots diced
1/2 a large yellow onion
2 celery stalks chopped
4 cups of chicken broth
3 cups of heavy cream
2 cups of gnocchi
1/3 cup of flour
1 cup of parmesan
basil
red pepper flakes
salt
pepper
Italian seasoning
Directions
In a bowl add your chicken with the olive oil and seasonings.
Let marinade for an hour and then cook in an air fryer for 18 minutes at 390 degrees.
Once the chicken is complete, shred and set on the side.
Heat a large pot over medium heat.
Add your butter and let it melt.
Add garlic, chopped onions, carrots and celery in the pot and sauté until vegetables are soft.
Once vegetables are soft add the flour and mix for 2 minutes.
Then add the chicken broth and heavy cream.
Season with salt, pepper, Italian seasoning and red pepper flakes.
Cover, reduce to medium low and cook for 30 minutes.
After 30 minutes add the parmesan, gnocchi and chicken and cook for an additional 5-8 minutes.
Garnish with basil and enjoy
