Chicken Lemon Orzo Soup
Ingredients
6 cups of chicken broth
2 cups of water
1 lb of broccoli
4 cloves of minced garlic
1 cup of orzo
1/3 cup of feta
1 lemon
olive oil
red chili flakes to taste
Instructions
Rince and salive broccoli florets, removing the stems.
In a medium pot add broccoli, garlic, chicken broth, water, salt and pepper.
Bring to a boil and then reduce heat to a simmer and cover for 30 minutes
Using a spoon or masher, gently smash the broccoli and break it up into smaller pieces.
Add the orzo and cook for 15 minutes. Stir the pasta constantly so it does not stick on the pot.
After 15 minutes, remove the pot from heat, crumble feta and add the juice of one lemon.
Serve and top with a drizzle of olive oil and red pepper flakes.
