New Year's Black Eyed Peas

Ingredients

  • 16 oz bag of frozen black eyed peas

  • 1 1/2 cups of water

  • 1 chicken bouillon cube

  • 1 jalapeño

  • 1/2 a large white or yellow onion

  • 1 bell pepper

  • 6 pieces of bacon chopped into small pieces

  • 1 beef smoked pasta

  • 4 cloves of garlic minced

  • 2 tbsp of flour

  • 1 tbsp of butter

  • salt

  • pepper

  • old bay

Directions

  1. In a medium pot add the butter over medium heat.

  2. Chop up your bell pepper, onion and jalapeño into small pieces.

  3. Sauté your veggies for for a few minutes. While the veggies are cooking chop the bacon and sausage into small bite size pieces.

  4. Add the bacon, sausage and minced garlic to the pot and cook until the bacon is crispy and the vegetables are soft.

  5. Add your water, chicken bouillon cube, salt, pepper and old bay.

  6. Bring water to a slight boil and then add your frozen black eyed peas.

  7. Reduce to heat until low and let cook for 10 minutes.

  8. Add your flour to thicken up the beans and stir for an additional 3-5 minutes.

  9. Serve immediately and enjoy!
