Loaded Baked Potato Soup

What you’ll need:

  • 1 lb of chopped bacon

  • 1 cup of shredded cheese

  • 1/4 cup of flour

  • 1 chopped onion

  • 3 celery stalks chopped

  • 1/4 cup of butter

  • 2 cups of chicken broth

  • 4 cups of heavy cream

  • 1 lb and a half of potatoes cut into small cubes

  • Salt

  • Pepper

  • Paprika

  • Garlic powder

  • 1/4 cup of chopped scallions

How to make it:

  1. In a medium pot fry up your bacon until crispy.

  2. Remove the bacon but leave the grease in the pan.

  3. Add your onion and celery with your butter.

  4. Cook until the veggies are soft and then add your flour.

  5. Mix the flour in with the veggies for 2 minutes.

  6. Then add 2 cups of chicken broth and 4 cups of heavy cream

  7. Add your potatoes and seasoning and then cover.

  8. Let your soup simmer for 25 minutes and then add half of your cooked bacon and 1/2 cup of cheddar cheese

  9. Once your cheese has melted, serve and top with more bacon, shredded cheese and scallions
