Pastina Soup
Ingredients
4 cups of chicken or veggie broth
6 cups of water
3 celery stalks
3 large carrots, peeled
1 yellow onion
6 gloves of garlic
1 tbsp of chicken bouillon
pastina or alphabet pasta
parmesan
salt
pepper
Directions:
In a large pot combine the water and chicken broth and bring to a boil.
Then add your carrots, onions, celery and garlic. Cover and cook over medium low heat for 45 minutes.
Remove the veggies from the broth and add them to a blender.
Add the to the blender and blend until smooth.
Pour the veggie mixture back into the broth.
Add in your pasta and cook according to its packaging.
Season with salt and pepper.
Scoop into individuals bowls, top with parmesan and enjoy!
