Orange Cranberry Muffins
Ingredients
2 cups of oat flour
2 tsp baking powder
1 tbsp orange zest (1-2 oranges)
1 1/4 cup of sugar
8 tbsp unsalted butter melted and cooled
2 eggs
2 tsp vanilla extract
1/4 of oat cup milk
1/4 cup freshly squeezed orange juice (2-3 oranges)
1 cup of cranberries
Crumble Topping
1/2 cup oat flour
1/3 cup granulated sugar
3 tbsp brown sugar
4 tbsp unsalted butter melted and cooled
Cranberry Syrup
1 cup cranberries
1 tbsp sugar
Directions
Preheat the oven to 350 degrees.
In a mixing bowl, combine flour, baking powder, orange zest, sugar, butter, eggs, vanilla extract, milk, and orange juice. Mix together and set aside.
In a separate bowl combine your cranberries with 1 tbsp of flour until they are all coated.
Fold in the cranberries to your muffin batter.
Scoop into muffin tins.
In a saucepan over medium-high heat bring 1 cup of cranberries and 1 tbsp of granulated sugar to a boil.
Squish the cranberries with a fork until you get a jam like consistency.
To make your crumble topping whisk together flour, sugar and butter.
Top your muffins with the jam and crumble.
Bake for 20 to 25 minutes and enjoy!
