Orange Cranberry Muffins

Ingredients

2 cups of oat flour

2 tsp baking powder

1 tbsp orange zest (1-2 oranges)

1 1/4 cup of sugar

8 tbsp unsalted butter melted and cooled

2 eggs

2 tsp vanilla extract

1/4 of oat cup milk

1/4 cup freshly squeezed orange juice (2-3 oranges)

1 cup of cranberries

Crumble Topping

1/2 cup oat flour

1/3 cup granulated sugar

3 tbsp brown sugar

4 tbsp unsalted butter melted and cooled

Cranberry Syrup

1 cup cranberries

1 tbsp sugar

Directions

  1. Preheat the oven to 350 degrees.

  2. In a mixing bowl, combine flour, baking powder, orange zest, sugar, butter, eggs, vanilla extract, milk, and orange juice. Mix together and set aside.

  3. In a separate bowl combine your cranberries with 1 tbsp of flour until they are all coated.

  4. Fold in the cranberries to your muffin batter.

  5. Scoop into muffin tins.

  6. In a saucepan over medium-high heat bring 1 cup of cranberries and 1 tbsp of granulated sugar to a boil.

  7. Squish the cranberries with a fork until you get a jam like consistency.

  8. To make your crumble topping whisk together flour, sugar and butter.

  9. Top your muffins with the jam and crumble.

  10. Bake for 20 to 25 minutes and enjoy!
