Gluten Free Blueberry Muffins
Ingredients
For the muffin:
1/4 cup of softened butter
1/2 cup of sugar
1.5 cups of gluten free all purpose flour
1 egg
1/2 cup of milk
1 tsp of vanilla
2 tsps of baking powder
1.5 cups of diced strawberries
For crump topping:
1/2 cup of gluten free all purpose flour
1/4 cup of brown sugar
1/4 cup of sugar
1/4 cup of butter
Directions:
Preheat the oven to 350 degrees
In a mixing bowl combine butter, sugar, egg, milk, vanilla, and baking powder until smooth
Fold in your blueberries
Spray your muffin tin with nonstick spray
Add your muffin batter 3/4 of the way
In a food processor add your flour, brown sugar, sugar and butter for the crumb topping
Blend until mixed
Sprinkle your crumble mix on top of your muffins
Bake for 20-25 minutes
Let cool and enjoy!
