Gluten Free Blueberry Muffins

Ingredients

For the muffin:

  • 1/4 cup of softened butter

  • 1/2 cup of sugar

  • 1.5 cups of gluten free all purpose flour

  • 1 egg

  • 1/2 cup of milk

  • 1 tsp of vanilla

  • 2 tsps of baking powder

  • 1.5 cups of diced strawberries

For crump topping:

  • 1/2 cup of gluten free all purpose flour

  • 1/4 cup of brown sugar

  • 1/4 cup of sugar

  • 1/4 cup of butter

Directions:

  1. Preheat the oven to 350 degrees

  2. In a mixing bowl combine butter, sugar, egg, milk, vanilla, and baking powder until smooth

  3. Fold in your blueberries

  4. Spray your muffin tin with nonstick spray

  5. Add your muffin batter 3/4 of the way

  6. In a food processor add your flour, brown sugar, sugar and butter for the crumb topping

  7. Blend until mixed

  8. Sprinkle your crumble mix on top of your muffins

  9. Bake for 20-25 minutes

  10. Let cool and enjoy!
