Cucumber Shrimp Sushi Boats

Ingredients:

1 large cucumber

  • 10 peeled and deveined frozen marinated shrimp

  • 1/2 cup of cooked jasmine rice

  • 1/4 cup of mayo

  • 2 tbsp of sriracha

  • 1/2 an avocado

  • Salt

  • Pepper

  • Sesame seeds

Directions:

  1. First cut your cucumber into 3 long pieces. Then cut those pieces in half

  2. Use a spoon to scoop out the insides of your cucumber

  3. In a bowl combine your rice with mayo, sriracha salt and pepper.

  4. Cook your shrimp according to its package or on the stove with butter.

  5. Peel your avocado and chop into small cubes.

  6. Add about 2 tbsp of the spicy mayo rice into your cucumber.

  7. Then top with the avocado pieces.

  8. Once your shrimp are done cooking, cut them into small bite sizes pieces and place on top of the rice with the avocado.

  9. Season with salt, pepper and sesame seeds
