Grilled Peppers with Burrata
Ingredients
4 bell peppers
3 slices of sourdough bread (torn into pieces)
2 tbsp red wine vinegar
2 gloves of garlic minced
1 ball of burrata cheese (8 oz)
olive oil spray
1/3 cup of olive oil
1 tbsp of butter
2 tbsp of herbs (you can use dried oregano, thyme, basil, rosemary, parsley etc.)
1 tsp of garlic powder
a pinch of crushed red pepper flakes
Directions
Preheat the grill to medium high heat.
Slice the peppers in half from top to bottom and remove veins and seeds.
Drizzle olive oil, salt and pepper one your bell peppers.
In a small bowl combine your vinegar, garlic powder, salt, pepper, red pepper flaks and herbs. Then slowly whisk in your olive oil.
Heat a medium skillet and add butter. Once your butter is melted add the minced garlic and stir until fragrant.
Then add your bread pieces along with salt and pepper and cook for 5-6 minutes or until crunchy.
Once your grill is heated up, place your peppers on the grill cut side down. Grill for 5 minutes or until slightly charge. Flip and cook for another 5 minutes.
On a large plate or platter add your bread pieces and bell peppers.
Pull apart your burrata and add on top of the peppers and bread.
Drizzle your vinaigrette over the peppers and top with fresh basil.
Serve immediately and enjoy!
