Shrimp & Chorizo Paella
During college I studied abroad in Barcelona. Spain. I don’t think there is anything better in life than fresh paella with tapas and a glass of sangria! This recipe brought me back to those days! This is the perfect dish to serve for a dinner party and impress your friends.
Ingredients
5 oz of cooked chorizo
1 pound of shrimp
1 1/2 cups of Arborio rice
1 medium white onion chopped
2 tbsp of minced garlic
3 1/2 cups of chicken broth
1/2 cup of frozen peas
2 tbsp of chopped parsley
2 tbsp of tomato paste
salt
pepper
paprika
a pinch of saffron
Directions
In a large pan add olive oil over medium high heat
Saute the chorizo and onion until onion is translucent
add the garlic and cook for 1 minute
Stir in the tomato paste, paprika, salt, pepper and saffron
Add the rice and then pour in the chicken broth.
Bring the chicken broth to a boil and then reduce heat and simmer for 15 minutes.
Add the shrimp and cook for 10 more minutes.
Stir in the peas and cook for 3 more minutes.
Remove from heat, top with parsley and enjoy!
