Shrimp & Chorizo Paella

During college I studied abroad in Barcelona. Spain. I don’t think there is anything better in life than fresh paella with tapas and a glass of sangria! This recipe brought me back to those days! This is the perfect dish to serve for a dinner party and impress your friends.

Ingredients

  • 5 oz of cooked chorizo

  • 1 pound of shrimp

  • 1 1/2 cups of Arborio rice

  • 1 medium white onion chopped

  • 2 tbsp of minced garlic

  • 3 1/2 cups of chicken broth

  • 1/2 cup of frozen peas

  • 2 tbsp of chopped parsley

  • 2 tbsp of tomato paste

  • salt

  • pepper

  • paprika

  • a pinch of saffron

Directions

  1. In a large pan add olive oil over medium high heat

  2. Saute the chorizo and onion until onion is translucent

  3. add the garlic and cook for 1 minute

  4. Stir in the tomato paste, paprika, salt, pepper and saffron

  5. Add the rice and then pour in the chicken broth.

  6. Bring the chicken broth to a boil and then reduce heat and simmer for 15 minutes.

  7. Add the shrimp and cook for 10 more minutes.

  8. Stir in the peas and cook for 3 more minutes.

  9. Remove from heat, top with parsley and enjoy!
