Lowcountry Boil Foil Packets

What you’ll need:

  • 6 large potatoes

  • 4 ears of corn

  • 4 andouille sausages

  • 2 cups of shrimp (fresh or frozen)

  • 2 tablespoons of butter

  • 4 garlic cloves minced

  • 1/2 lemon

  • Salt

  • Pepper

  • Cajun seasoning

  • Old bay

How to make it:

  1. Preheat the oven to 400 degrees.

  2. Boil a large pot of water

  3. Chop your potatoes into small cube pieces.

  4. Cut your corn into smaller pieces by first cutting it in half horizontally and then those pieces in half vertically.

  5. Add your corn and potatoes into your boiling water and cook for 10 minutes.

  6. Remove your corn and potatoes from the pot and add to a large bowl.

  7. Chop up your sausages into small bite size pieces.

  8. Add your sausages into the bowl with the corn and potatoes.

  9. If your shrimp are frozen, first defrost them prior to adding them into the bowl. Add your shrimp into the bowl with the corn, potatoes and sausage.

  10. Then add your butter, juice from 1/2 lemon, salt, pepper, old bay, and cajun seasoning to your bowl.

  11. Mix everything together and then transfer equal portions to 4 sheet of aluminum foil. (This recipe should make 4 large foil packets).

  12. Crinkle the aluminum foil around your shrimp and potato mixture and then place on a baking sheet.

  13. Bake for 15 minutes and enjoy!
