Shepherd's Pie

Ingredients:

Meat Filling:

  • 2 tbsp of olive oil

  • 1 large onion diced

  • 4 cloves of garlic

  • 1 cup of frozen carrots and peas

  • 1 1/2 lbs of ground beef

  • 1 tsp of salt

  • 1/2 tsp of pepper

  • 2 tbsp of Worcestershire sauce

  • 1 tsp of rosemary

  • 1 tsp of thyme

Potatoes:

  • 5 large potatoes

  • 1/2 cup of heavy cream

  • 1/4 cup of butter

  • Salt

  • Pepper

Directions

  1. Bring a large pot of water to a boil and preheat the oven to 375 degrees

  2. Peel your potatoes and cook them in the boiling water for 10-15 minutes.

  3. In a cast iron pan over medium heat add your olive oil and diced onions.

  4. Cook until the onions are translucent and then add your ground beef.

  5. Once the beef is mostly brown add your frozen veggies, seasonings and Worcestershire sauce.

  6. When the potatoes are soft, drain the water and add the heavy cream, butter, salt and pepper.

  7. Use a hand mixer or potato masher to blend until smooth.

  8. Place your mashed potatoes on top of your beef mixture and spread around, fully covering the beef.

  9. Bake for 25 - 30 minutes and enjoy!
