Sweet Potato Puffs

Ingredients

  • 2 medium sweet potatoes

  • 1/2 cup of shredded mozzarella

  • 1 cup of flour

  • Salt

  • Pepper

Directions

  1. Preheat your oven to 400 F

  2. Stab your sweet potatoes with a fork and then place on a cookie sheet to bake for 45 minutes.

  3. Scoop out the flesh of the sweet potato and combine it with the flour, mozzarella, salt and pepper until you get a dough.

  4. Knead your dough out for a few minutes and then roll out to be about 1/2 an inch thick.

  5. Cut your dough into inch squares.

  6. Cover and leave to rest in the refrigerator for 30 minutes.

  7. Heat up a pan with oil over medium low heat and fry each of the squares for about 3 minutes on each side.

  8. Enjoy with ranch or your favorite dipping sauce!
