Sweet Potato Puffs
Ingredients
2 medium sweet potatoes
1/2 cup of shredded mozzarella
1 cup of flour
Salt
Pepper
Directions
Preheat your oven to 400 F
Stab your sweet potatoes with a fork and then place on a cookie sheet to bake for 45 minutes.
Scoop out the flesh of the sweet potato and combine it with the flour, mozzarella, salt and pepper until you get a dough.
Knead your dough out for a few minutes and then roll out to be about 1/2 an inch thick.
Cut your dough into inch squares.
Cover and leave to rest in the refrigerator for 30 minutes.
Heat up a pan with oil over medium low heat and fry each of the squares for about 3 minutes on each side.
Enjoy with ranch or your favorite dipping sauce!
