Tomato & Basil Soup
Ingredients
2 tbsp of butter
1 white onion diced
2 large carrots diced
56 oz of San Marzano Tomatoes
4 cups of chicken or vegetable stock
2 cups of heavy whipping cream
1/2 cup of parmesan
2 handfuls of fresh basil
Salt
Pepper
Garlic powder
Crushed red pepper
Directions
Heat your butter over medium heat in a deep pot.
Add your onions and carrots and sauté until onions are translucent (10 minutes)
Add salt, pepper, garlic powder, red pepper flakes, tomatoes and chicken stock.
Stir to combine and let simmer for 30 minutes.
Add heavy whipping cream and parmesan and let simmer for an additional 5 minutes.
Remove from heat, add the basil and blend with an immersion blender or transfer to a blender.
Garnish with fresh basil and enjoy!
