Butternut Squash, Bacon + Kale Frittata
Ingredients
9 eggs
1/4 cup of milk
5 slices of bacon chopped
1/4 of an onion chopped
1 tbsp of minced garlic
2 cups of loosely packed raw kale (remove hard stems)
1 cup of cooked & cubed butternut squash
4 oz of goat cheese
salt
pepper
Directions
Preheat the oven to 400 degrees.
Heat a cast iron over medium heat and add the bacon. Cook until crispy.
Add your onion and minced garlic and cook for 2-3 minutes.
Add the kale, a splash of water and top your pan with a lid to let the kale steam for a few minutes.
Remove your lid and add your cooked squash.
In a medium bowl whisk your eggs, milk, salt and pepper.
Pour the eggs over the vegetables and spread out evenly.
Crumble goat cheese on top of the eggs.
Place your frittata in the oven for 10-15 minutes or until it is puffy and golden.
Let cool for 5 minutes and enjoy!
