Broccoli and Feta Frittata
Frittatas are the perfect breakfast that you can enjoy all week long. Growing up my mom would always make this broccoli and feta frittata on Sunday mornings. It was the perfect addition to brunch and enough to feed the entire family.
Ingredients
12 eggs
1/3 cup of milk
3 cups of broccoli florets cut into 1/2 inch pieces
1 cup of crumbled feta
1/2 tsp of lemon juice
3 tbsp of water
salt
pepper
garlic powder
crushed red peppers
Directions
Preheat the oven to 350 degrees.
In a bowl beat the eggs, milk and 1/2 tsp of salt, garlic powder and red pepper flakes and set aside.
In a oven safe skillet over medium heat cook your broccoli with salt until tender (about 7-9 minutes)
Add the lemon juice and water over the broccoli and continue to cook for 1 minute.
Remove the pan from heat and add in your feta and egg mixture.
Transfer to the oven and bake for 10 minute or until frittata is puffy.
Let cool for 5 minutes and enjoy!
