Chorizo & Potato Frittata

Ingredients

  • 8 eggs

  • 1/2 cup of milk

  • 8 oz of Chorizo or Vegan Chorizo

  • 3/4 of a pound of mini yellow potatoes

  • 1/2 cup of grated Parmesan cheese

  • 1 tsp of oregano

  • 1 tsp of garlic powder

  • salt

  • pepper

Directions

  1. Bring water to a boil and slice your potatoes into fourths.

  2. Preheat your oven to 400 degrees.

  3. Boil the potatoes for 10 minutes or until soft.

  4. White the potatoes are boiling add your chorizo to the skillet and cook based on the instructions on the package.

  5. In a bowl combine eggs, milk, oregano, garlic powder, salt and pepper.

  6. For the frittata you can use a pie pan or a 9 inch cake pan. Spray your pan with nonstick spray.

  7. Place your potatoes and chorizo into your pan.

  8. Pour the egg mixture on top and bake for 15 minutes.

  9. Let cool for 5 minutes and enjoy!
