Chicken Tortilla Soup
What you’ll need:
2 large chicken breast
4 roma tomatoes
6 garlic cloves
4 chiles
1/2 white onion
Bunch of cilantro
2 chicken bouillon cubes
2 tbsp of chili powder
2 tbsp of lime juice
Salt
Pepper
1 1/2 cups of frozen corn
1 can of black beans
Tortilla strips
Additional Toppings:
Shredded cheese
Cubed avocado
Fresh lime slices
How to make it:
Add your chicken breast, tomatoes, garlic, chiles, onion, cilantro and bouillon cubes to a large pot.
Add 6 cups of water and season with salt, pepper, lime juice and chili powder.
Cover and let cook over medium heat for 20 minutes.
Remove your chicken and shred in a separate bowl.
Remove the tomatoes, garlic, onion, chilies and cilantro from the soup and blend until smooth.
Add your sauce and chicken back into the pot along with the frozen corn and black beans.
Cook for an additional 10 minutes.
Once your soup has been served in its separate bowls top with the tortilla strips, avocado, shredded cheese and fresh limes.
