Sriracha Chicken Skewers

Ingredients

  • 2 chicken breast

  • 1 zucchini

  • 1 yellow squash

  • 2 bell pepper

  • 1 purple onion

  • 2 tablespoons of sour cream

  • 1 tablespoon of olive oil

  • 3 tablespoons of Sriracha seasoning

  • 1 tablespoon garlic powder

  • salt

  • pepper

  • skewer sticks

Directions

  1. Slide your chicken breast into small 1 inch cube pieces.

  2. Combine your chicken breast, sour cream, sriracha seasoning, salt and pepper in a bowl until the chicken is nicely coated with the sriracha mixture.

  3. Chop your zucchini and yellow squash into 1/3 inch slices. Cut your bell pepper into 1/2 inch thick pieces.

  4. Add your vegetables into a bowl and mix with olive oil, salt, pepper and garlic powder.

  5. Stab your vegetables and chicken with the skewer sticks directly in the middle of each piece.

  6. Place your skewers on the grill over medium heat for about 5 minutes on the first side and 3-5 minutes on the second side.

  7. Serve warm with tzatziki, hummus or your favorite dipping sauce
