Creamy Pappardelle with Chicken

Creamy Pappardelle with Chicken

serves 4

Ingredients:

  • 2 cups of chopped bacon

  • 3/4 cups of chopped onion

  • 2 tablespoons of minced garlic

  • 1 1/2 cups of heavy cream

  • 2 medium carrots chopped

  • 2 cups of chopped grilled chicken or shredded chicken

  • 1 1/2 cups of grated parmigiano - reggiano cheese

  • 16 oz of pappardelle egg pasta

  • parsley for garnish

  • salt

  • pepper

Directions

  1. Bring a large pot of water to boil.

  2. Meanwhile cook your bacon in a large skilled over medium heat.

  3. Once your bacon is crispy, remove and transfer to a plate.

  4. Add the onion and garlic to the bacon fat and cook until the onion is tender.

  5. Add your cream to the onions and let simmer until slightly thickened (about 5 minutes).

  6. Add your pappardelle and carrots to the boiling water and cook for about 5 - 6 minutes.

  7. Keep 1 cup of your pasta water, then drain the pasta.

  8. Once your sauce is thickened stir in your parmigiana reggiano cheese.

  9. Add 1/2 cup of pasta water, the cooked chicken and bacon into the sauce.

  10. Toss to combine.

  11. Serve with additional cheese and parsley.
