Creamy Pappardelle with Chicken
serves 4
Ingredients:
2 cups of chopped bacon
3/4 cups of chopped onion
2 tablespoons of minced garlic
1 1/2 cups of heavy cream
2 medium carrots chopped
2 cups of chopped grilled chicken or shredded chicken
1 1/2 cups of grated parmigiano - reggiano cheese
16 oz of pappardelle egg pasta
parsley for garnish
salt
pepper
Directions
Bring a large pot of water to boil.
Meanwhile cook your bacon in a large skilled over medium heat.
Once your bacon is crispy, remove and transfer to a plate.
Add the onion and garlic to the bacon fat and cook until the onion is tender.
Add your cream to the onions and let simmer until slightly thickened (about 5 minutes).
Add your pappardelle and carrots to the boiling water and cook for about 5 - 6 minutes.
Keep 1 cup of your pasta water, then drain the pasta.
Once your sauce is thickened stir in your parmigiana reggiano cheese.
Add 1/2 cup of pasta water, the cooked chicken and bacon into the sauce.
Toss to combine.
Serve with additional cheese and parsley.
