Couscous Veggie Bowl

Ingredients

  • Bell Peppers

  • Red Onion

  • Sweet Potatoes

  • Yellow Squash

  • Zucchini

  • Cooked Couscous

  • Olive Oil

  • Lemon Juice

  • White Wine Vinegar

  • Salt

  • Pepper

  • Feta

  • Italian Seasoning/ Oregano

  • Grilled Chicken

Directions:

Preheat your oven to 400 F

Chop up all of your veggies into cubes and place on a cooking sheet.

Drizzle 2 tablespoons of olive oil over your veggies and coat with salt, pepper and Italian seasoning. Bake for 25 minutes at 400 degrees

While your veggies are cooking mix up your vinaigrette by combining lemon juice, vinegar, olive oil, salt and pepper. If you haven’t already you can also cook your couscous and grilled chicken.

When your veggies are done put them on top of your cooked couscous, add your chicken and top with feta. Lastly drizzle your vinaigrette on top and enjoy!
