Pumpkin Vodka Pasta
Ingredients
1/2 lb of pasta
1/4 cup of olive oil
2 tablespoons of minced garlic
2 tablespoons of tomato paste
1/4 cup of pumpkin puree
1 tablespoon of vodka
1/2 cup of heavy cream
1 tablespoon of fresh thyme
1/2 cup of Parmesan
red pepper flakes to taste
salt and pepper to taste
Directions
Cook your pasta according to package directions.
Over medium low hear add olive oil and garlic to a pain. Cook for 1 minute.
Add tomato pasta and pumpkin to a pan and let cook for 3 minutes.
Add vodka to the pan and mix.
Add heavy cream, red pepper flakes and thyme to the sauce and mix until the sauce thickens.
Drain your pasta and save 1/4 cup of pasta water.
Add your cooked pasta and pasta water to the sauce.
Add the parmesan cheese and mix.
Serve with additional thyme and parmesan as garnish.
