Shrimp and Squash Baked Feta Pasta
Ingredients
1/2 eggplant
1 zucchini
1 yellow squash
1 cup of cherry tomatoes
1 block of feta
1/4 cup of olive oil
2 tbsp on minced garlic
oregano
salt
pepper
pasta
1/2 lb of shrimp
butter
Direction
Preheat your oven to 400 degrees.
Chop the zucchini, squash, and eggplant into 1/2 pieces.
Add vegetables, garlic and feta into a baking dish.
Coat the veggies and feta with olive oil, salt , pepper and oregano.
Bake for 30 mins
While your pan is in the oven cook your pasta according to its box.
In a frying pan combine 1 tbsp of minced garlic and butter. Sauté the shrimp on medium hear for 1-2 minutes on each side.
Once the vegetables are done cooking, mix with the pasta until the feta has melted and formed a sauce like consistency.
Top with the shrimp and serve immediately.
