Shrimp and Squash Baked Feta Pasta

Ingredients

  • 1/2 eggplant

  • 1 zucchini

  • 1 yellow squash

  • 1 cup of cherry tomatoes

  • 1 block of feta

  • 1/4 cup of olive oil

  • 2 tbsp on minced garlic

  • oregano

  • salt

  • pepper

  • pasta

  • 1/2 lb of shrimp

  • butter

Direction

  1. Preheat your oven to 400 degrees.

  2. Chop the zucchini, squash, and eggplant into 1/2 pieces.

  3. Add vegetables, garlic and feta into a baking dish.

  4. Coat the veggies and feta with olive oil, salt , pepper and oregano.

  5. Bake for 30 mins

  6. While your pan is in the oven cook your pasta according to its box.

  7. In a frying pan combine 1 tbsp of minced garlic and butter. Sauté the shrimp on medium hear for 1-2 minutes on each side.

  8. Once the vegetables are done cooking, mix with the pasta until the feta has melted and formed a sauce like consistency.

  9. Top with the shrimp and serve immediately.
