Alfredo Zucchini and Corn Pasta
Ingredients
2.5 cups of cooked pasta
1 cup of sliced zucchini
1 cup of sliced yellow squash
1/2 cup of corn
1 cup of milk or cream
1/2 cup of parmesan
1/2 cup of mozzarella
2 tbsp of flour
1 tbsp of minced garlic
4 tbsp of butter
1/2 of a lemon
salt
pepper
Directions
Melt 2 tbsp of butter in a pot and then add your zucchini, yellow squash and corn.
Cook until your vegetables have softened.
Then, add your milk, cheeses, garlic and flour to your vegetables and stir until a sauce has formed. (If your sauce is too thick add some pasta water, if your sauce is too thin add more flour).
Add your cooked pasta and combine.
Season with salt, pepper, lemon zest and lemon juice and enjoy!
