Sourdough Focaccia
Ingredients:
1/4 cup of sourdough started
1 2/3 cups of water
4 cups of bread flour
1 tsp of salt
1/4 cup of olive oil
Flaky salt
Rosemary or other fresh herbs
Directions:
In a large bowl mix your sourdough started with the water.
Then add your bread flour and salt and mix again with an electric mixer.
Cover the bowl with a clean towel and let the dough rest for 30 minutes.
With a dough scraper, scrape away the dough from the sides of the bowl. Wet your hands and then grab a section of dough to stretch and fold.
Rotate your bowl clockwise as your stretch and fold the dough over on each side. The dough should become smooth after.
Flip the dough and repeat this process on the other side.
Cover the bowl with plastic wrap and let rise under room temperature for 12-18 hours. The dough should increase in size by 70% with visible bubbles.
Line a 11.5 x 8 in baking dish with parchment paper and pour your olive oil into the pan.
Add your dough into the pan and fold the top of the dough towards the middle. Repeat on each side.
Cover the dough and let it rise again for 1-4 hours. Your dough should completely fill your dish.
Preheat the oven to 425.
Drizzle olive oil over the dough, dimple the dough with your fingers and add fresh herbs and salt on top.
Bake for 20-25 minutes and enjoy!
