Veggie Parmesan Tarte

Ingredients

  • pie crust

  • 1/2 cup of heavy cream

  • 1 1/2 cups of shredded parmesan cheese

  • 1 egg

  • 2 large carrots

  • 1 eggplant

  • 1 zucchini

  • salt

  • pepper

Directions

  1. Preheat the oven to 350 F

  2. Peel your carrots, zucchini and eggplant with a mandolin or vegetable slicer into thin strips. To get thin eggplant slices first cut it in half and slice on the side.

  3. In a bowl combine the heavy cream, parmesan, egg, salt and pepper.

  4. Spread out your pie crust in a pie pan.

  5. Pour in the parmesan cream mixture.

  6. Place the veggie strips in the pie by creating a spiral pattern and starting outside and going in.

  7. Bake for 40 mins.

  8. Let cool for 10 minutes and enjoy!
