Veggie Parmesan Tarte
Ingredients
pie crust
1/2 cup of heavy cream
1 1/2 cups of shredded parmesan cheese
1 egg
2 large carrots
1 eggplant
1 zucchini
salt
pepper
Directions
Preheat the oven to 350 F
Peel your carrots, zucchini and eggplant with a mandolin or vegetable slicer into thin strips. To get thin eggplant slices first cut it in half and slice on the side.
In a bowl combine the heavy cream, parmesan, egg, salt and pepper.
Spread out your pie crust in a pie pan.
Pour in the parmesan cream mixture.
Place the veggie strips in the pie by creating a spiral pattern and starting outside and going in.
Bake for 40 mins.
Let cool for 10 minutes and enjoy!
