Antipasto Skewers

These antipasto skewers are the perfect snack to bring to the beach or pool! I made them the other day for a pool party and they were such a big hit. They are easy to eat since they don’t require utensils and are even easier to make.

Makes 12

Ingredients

  • 24 cheese tortellini cooked

  • 12 mozzarella balls or cubes

  • 1/4 cup of Italian dressing

  • 12 pieces of salami (small to med sized, or 6 large pieces cut in half)

  • 12 pepperonis

  • 12 basil leaves

  • 12 skewer sticks

Directions

  1. Place your mozzarella and tortellini in a bowl and mix in the Italian dressing.

  2. Once your mozzarella and tortellini are well coated in dressing you can begin putting one mozzarella ball, two tortellini, one pepperoni, one pieces of salami and one basil leaf on a skewer.

  3. Repeat on the remaining skewers

  4. Serve immediately or refrigerate
