15 Minute Pasta Salad

Pasta salad is one of my favorite sides in the summer time. You can’t have your bbq without some pasta salad on the side. This warmer weather has me craving yet another pasta dish. Luckily this one is super easy and quick to make!

Ingredients

  • Pasta Salad Kit

  • 1 cup of Fusilli Pasta

  • 1 tbsp Olive Oil

  • Mini Pepperonis

  • Small Mozzarella Balls

  • Cherry Tomatoes

  • Basil

  • Oregano

  • Salt

  • Pepper

I find the easiest way to make pasta salad is with a pasta salad kit. You can find these at the grocery store in the pasta section. Its just pasta and a seasoning packet in a box. This is a lot cheaper option if you don’t have a ton of seasonings already in the pantry. My favorite one I use is the Classic Suddenly Pasta Salad by Betty Crocker but you can find other ones by Hidden Valley or other seasoning brands. A lot of times the seasoning packets make things over-seasoned so I normally use a portion of the packet and add more pasta!

Directions

  1. Start by brining water to boil and add your pasta. I typically find the pasta kits don’t have enough pasta for my liking so if you want more add a cup more of your pasta.

  2. While your pasta is cooking start prepping your other ingredients. Cut your cherry tomatoes and mozzarella balls into quarters. Use as many as you see fit, I typically use about 8 tomatoes and mozzarella balls each.

  3. Chop up your basil.

  4. Once your pasta is done cooking strain it and run it under cold water. Place it into a large bowl.

  5. Add a tablespoon of olive oil to your pasta along with 1/2 of the seasoning packet from your pasta kit. (If you don’t have a pasta salad kit I also have used a 1/2 cup of my favorite Italian dressing).

  6. Throw in your tomatoes, mozzarella, basil and a handful of mini pepperonis. (If you can’t find the small ones just chop up some regular ones. I did that in my picture).

  7. Add a dash of salt, pepper and oregano and mix everything up.

  8. Place your pasta salad in the refrigerator for at least one hour prior to surveying.

  9. Enjoy!
