Peach, Burrata and Prosciutto Salad
This is one of my favorite salads to make in the summer. There is nothing like a juicy peach while they are in season. I love how the sweetness of a peach pairs with the saltiness of prosciutto and the bitterness of arugula.
Ingredients:
Arugula
Peaches
Burrata
Prosciutto
Olive Oil
Balsamic Glaze
Thyme
Salt
Pepper
Create a bed of arugula.
Cut your peaches into slices and place on top of the arugula.
Break apart your burrata and place alongside the peaches.
Cut your prosciutto into smaller pieces and place in your salad.
Drizzle a little bit of olive oil on top of your salad.
Then drizzle some balsamic glaze over your salad.
Season with fresh thyme, salt and pepper and enjoy!
