Whipped Feta & Cranberry Dip

Ingredients

  • 1 cup of cranberries

  • the juice of 1 lemon

  • 1/4 cup of maple syrup

  • 6 oz of feta

  • 6 oz of cream cheese

  • 2 tbsp of olive oil

  • 1 tbsp of minced garlic

  • 1/4 tsp of crushed red pepper flakes

  • 2 tbsp of honey

  • 1 tbsp of dried rosemary

  • Crostini for serving

Directions

  1. In a saucepan, combine your cranberries, lemon juice and maple syrup over medium low heat.

  2. Cook until you get a jam like constituency ( around 10 mins). Remove from heat.

  3. In a blender or food processor combine feta, cream cheese, olive oil, minced garlic, crushed red pepper, and honey. Blend until smooth.

  4. Add your feta dip into a bowl, top with the cranberries, dried rosemary and more honey.

  5. Serve with crostini or crackers.
