Whipped Feta & Cranberry Dip
Ingredients
1 cup of cranberries
the juice of 1 lemon
1/4 cup of maple syrup
6 oz of feta
6 oz of cream cheese
2 tbsp of olive oil
1 tbsp of minced garlic
1/4 tsp of crushed red pepper flakes
2 tbsp of honey
1 tbsp of dried rosemary
Crostini for serving
Directions
In a saucepan, combine your cranberries, lemon juice and maple syrup over medium low heat.
Cook until you get a jam like constituency ( around 10 mins). Remove from heat.
In a blender or food processor combine feta, cream cheese, olive oil, minced garlic, crushed red pepper, and honey. Blend until smooth.
Add your feta dip into a bowl, top with the cranberries, dried rosemary and more honey.
Serve with crostini or crackers.
