Vodka Sauce Lasagna
Ingredients
1 cup of ricotta
1/2 cup of mascarpone
1 cup of shredded mozzarella
1/4 cup of parsley
2 cups of ground beef or Italian sausage cooked
2 tbsp of butter
1 diced shallot
3 tbsp of minced garlic
Red pepper flakes
6 oz of tomato paste
2 shots of vodka
3 1/2 cups of heavy cream
1 cup of crushed tomatoes
Salt
1/2 cup of parmesan.

Directions
In a bowl combine your ricotta, mascarpone, 1/2 cup of mozzarella, 1 tbsp of minced garlic and parsley.
Over medium heat add your butter, chopped shallot and minced garlic. Cook until tender and fragrant.
In a large pan cook your ground beef or sausage and drain off the grease.
In a separate pot, bring water to a boil and cook your pasta according to the box.
Add the crushed red peppers and tomato paste to your onions.
Pour in 2 shots of vodka and then cook until the vodka has cooked off.
Stir in your crushed tomatoes and heavy cream.
Remove from heat and stir in your parmesan.
In a baking dish layer your lasagna by placing the noodles down, cheese mixture, ground beef and sauce.
Top your final layer with your remaining mozzarella.
Cook for 30 minutes at 375F
Top with fresh basil and enjoy!
