Cacio e Pepe
Ingredients
12 oz of spaghetti
6 tbsp of butter (or vegan butter)
2 tbsp of cracked black pepper
1.5 cups of grated parmesan
2/3 cup of grated pecorino
1 cup of pasta water
Directions
Cook your pasta until tender and save 1 cup of pasta water for your sauce.
In a sauce pan combine 4 tbsp of butter and pepper.
Once the butter is melted add 3/4 cup of pasta water.
Bring to a simmer and then add your pasta.
Reduce heat to low and add the parmesan.
Remove from heat and add the pecorino and toss with tongs.
Once the pasta is coated in sauce transfer to a bowl and enjoy!
