Herbs de Provence Roasted Vegetables
Ingredients
1.5 cups of butternut squash cubes
1.5 cups of chopped up Brussels sprouts
1/2 red onion
2 tablespoons of olive oil
1 tablespoon of minced garlic
Herbs de Provence seasoning
salt
pepper
Directions
Preheat your oven to 425 degrees.
Chop up 1/2 a red onion into strips and place on a baking sheet.
Add your butternut squash cubes and brussels sprouts and spread evenly on the baking sheet.
Drizzle olive oil across your vegetables.
Add your garlic, herbs de Provence, salt and pepper. (The amount is up to your preference.)
Bake for 25 - 30 mins or until the vegetables are crispy!
