Ratatouille

Ratatouille

Ratatouille is a French dish that is very similar to a vegetable stew. It pairs well with chicken or pork!

Ingredients:

  • 1 Eggplant

  • 3 Roma Tomatoes

  • 1 large Zucchini

  • 1 large Yellow Squash

  • 1 Bell Pepper

  • 1/2 an Onion

  • 14 oz Crushed Tomatoes

  • 4 cloves of garlic

  • Basil

  • Olive Oil

  • Salt

  • Pepper

  • Thyme

Directions:

  1. Preheat the oven to 375

  2. Sauté the onion, garlic, and bell pepper with olive oil over medium heat until tender

  3. Add crushed tomatoes and lettuce sauce simmer for 15 minutes. Add salt, pepper, thyme and basil.

  4. Cut veggies into 1/8 “ thickness.

  5. Pour sauce into an oven safe pan.

  6. Arrange sliced veggies on their sides in the sauce.

  7. Brush with olive oil.

  8. Sprinkle with garlic, basil, salt and pepper.

  9. Cover with tin foil and bake for 30 minutes.

  10. After 30 minutes, uncover and let bake for an additional 15 minutes.

  11. Let cool and enjoy!
