Tzatziki Zucchini
What you’ll need:
2 zucchini
avocado oil
sea salt
1/4 cup of tzatziki sauce
2 tbsp of parsley chopped
2 tbsp of pine nuts
crumbled goat cheese
honey
How to make it:
Preheat the oven to 400 degrees
Cut your zucchini in half lengthwise.
Score the cut side of the zucchini in a crosshatch pattern
Drizzle salt onto the scored side of zucchini and let sit for 20 minutes to draw out the moisture.
Pour avocado oil into a frying pan over medium heat.
Add the zucchini cut side down and allow it to caramelize (about 5 minutes)
Place your zucchini in the oven for 20 minutes. About 10 minutes through remove the zucchini and flip so the scored side up goes back into the oven.
Remove the zucchini from the oven.
Top the zucchini with tzatziki, pine nuts, parsley, and goat cheese.
Drizzle with honey and enjoy!
