Pine Nut + Feta Guacamole

Here’s a Mediterranean twist on classic guacamole. I was first inspired to make this after having pine nuts in guacamole in a restaurant back home. After thinking about it I was like okay what goes well with pine nuts? Feta. Since feta is similar to Cotija cheese (the crumbly kind) seen in Mexican dishes I decided feta would make the perfect substitute and bring a different taste to our guacamole.

Ingredients

  • 2 Avocados

  • 1 Roma Tomato (diced)

  • 1/2 onion (diced)

  • feta

  • pine nuts

  • cilantro

  • lime

  • salt

  • pepper

1. Avocados are key

Your guacamole is only as good as your avocados. You know they are ready when you can hold them and they are soft but not soft to the point you can stick your finger through it. If an avocado feels like a rock, don’t use it. Once you find your perfect avocados slice them in half, remove the pit and use a spoon to scrape the avocado out of the peel.

2. Add the accessories

Now that you have the avocado in a bowl, it’s time to add its friends. Add your diced up tomato and onion. You don’t want your guacamole to be watery so be sure to remove the seeds while dicing up your tomato. Next add your pine nuts, feta, a squeeze of lime juice, a handful of cilantro and some salt and pepper. I don’t put exact measurements here because its your guacamole. I love lime juice so I may use the whole lime in my guacamole. If lime isn’t your thing then don’t do that. Make it to fit your needs.

3. Let’s mix it up

Now that all your ingredients are in, it’s time to mix things up. Guacamole doesn’t require anything special to mix it with. I normally just throw it all in a bowl and use a spoon or fork to mash it around. This is where your soft avocados come in handy. If they are too hard you’re going to have a hard time mixing your guacamole. This shouldn’t be hard. If you’re feeling fancy a molcajete is that stone bowl and rock (pestle) that all the chefs are using to mash up their avocados. Sprinkle some pine seeds and feta on top to make it extra pretty.

4. Enjoy but not for too long

Now that your guacamole is ready enjoy it but not for too long. Guacamole does not last long. Eat it as soon as you make it. This isn’t something you can make one day and keep it for later. Guacamole turns brown after its been exposed to air for too long. To help preserve it place a chunk of onion on top and cover it in plastic wrap. This won’t make it last forever but it will definitely help keep it fresh longer.
