Stuffed French Toast
Ingredients:
Custard:
1 1/2 cups of heavy cream
1/4 cup of cornstarch
4 egg yolks
2 tbsp of butter
2 tsp of vanilla
1/2 cup of sugar
French Toast:
12 slices of brioche bread
3/4 cup of heavy cream
2 large eggs
1 tsp of vanilla extract
1 tbsp of brown sugar
1/4 tsp of cinnamon
Maple syrup
Berries
Directions
Start by making the custard by combining cornstarch, sugar, salt, and egg yolks.
In a pot over medium heat combine the heavy cream and vanilla. Heat until it starts to bubble around the edges but not boiling.
Take off the heat and slowly add to the cornstarch mix. Continuously whisk together as you add the milk until the mixture is smooth.
Transfer the mixture back to your pot and continue to heat over medium heat. Once the mixture thickens, remove from heat and add your butter.
Transfer your custard to a bowl and put in the fridge to chill.
In a bowl, combine heavy cream, eggs, brown sugar, vanilla extract and cinnamon.
Add some butter to a large frying pan over medium low heat.
Add the custard to one slice of your bread and then add a piece on top to make a sandwich.
Dip your sandwich in the heavy cream batter.
Place on a frying pan and cook for 3 minutes on each side or until golden.
Remove from the pan and top with additional custard, berries, powdered sugar and maple syrup.
